Instructions

1) Preheat your oven to 350°F (175°C). Roll out the thawed puff pastry sheet on a clean surface and cut it into your desired shapes and sizes for the cream puffs. 

2) Use a fork to gently poke holes across the surface of each pastry piece to prevent them from puffing unevenly. Brush each piece with an egg or milk wash to achieve a golden, glossy finish.

3) Place the prepared puff pastry on a baking sheet and bake for 20-25 minutes, or until they are golden brown and fully cooked. 

4) Allow the pastries to cool completely to room temperature before proceeding with the filling.

5) In a large mixing bowl, combine the heavy whipping cream, powdered sugar, cardamom powder, and pistachio paste. Using an electric beater, whip the mixture until stiff peaks form. Be careful not to overwhip to prevent the cream from breaking. 

6) Transfer the whipped cream mixture to a piping bag for easy filling.

7) Once the puff pastries have cooled, slice them in half horizontally. Pipe the pistachio cardamom cream generously into the bottom half of each pastry, then place the top half back on.
