Instructions

1) Begin by preparing the vegetables. Wash and dry one large cucumber and one large carrot thoroughly. Using a peeler, slice the cucumber and carrot into thin, ribbon-like strips.

PRO TIP: For the cucumber, stop peeling once you reach the seeds to maintain the ideal texture.

2) Prepare the dressing by combining ¾ cup of Greek yogurt, ½ tablespoon of minced garlic, 1 tablespoon of fresh lemon juice, 1 tablespoon of mayonnaise, 1 tablespoon of honey, 1 teaspoon of chili flakes, 1 teaspoon of black pepper, 1 tablespoon of finely chopped parsley or dill, and salt to taste in a mixing bowl.

3) Stir the mixture until it is smooth and well blended.

4) In another bowl, place the prepared cucumber and carrot ribbons. Pour the dressing over the vegetables and toss gently to ensure the ribbons are evenly coated.

5) Cover the bowl and chill the salad in the refrigerator for at least 30 minutes to enhance the flavors.
