Ingredients

  • Soya Chunks - 1 1/2 cup (dry)
  • Channa Daal - 1/2 cup
  • Onion - 1 medium
  • Potato - 1 medium (boiled)
  • Cilantro - 3-4 Tbsp. (chopped)
  • Green Chilies - 3-4 qty.  (chopped)
  • Ginger - 1 inch
  • Garlic - 4-5 cloves
  • Salt - 1 1/2 tsp
  • Red Chili Powder - 1 tsp
  • Coriander Powder - 1 1/2 tsp
  • Turmeric Powder - 1/2 tsp
  • Cumin Powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Shami Kabab Masala - 1 tsp
  • Bread Crumbs - 1-2 bread slices
  • Oil - 2 Tbs + Oil for frying

Instructions

1) Begin by soaking 1 1/2 cups soya chunks in hot water for about 1 hour.

2) In a separate bowl rinse and soak 1/2 cup of chana dal (split chickpeas) for 1 hour.

3) In the meantime boil 1 potato until soft, set aside.

4) After 1 hour squeeze out the excess water from the soaked soya chunks.

5) In a pressure cooker, combine the soya chunks, soaked chana dal, 2 tablespoons of oil, half an onion, 1 inch piece ginger, 4-5 cloves of garlic, 1 1/2 tsp salt, 1 tsp red chili powder, 1 1/2 tsp coriander powder, 1/2 tsp turmeric powder, 1/2 tsp cumin powder, 1/2 tsp garam masala powder, and 1 tsp shami kabab masala. Add 1 cup of water.

6) Cook on high heat until the first whistle. Then reduce the heat to medium-low and cook for 2 more whistles.

7) Allow the pressure to release naturally. If there is any water left in the cooker, cook on high heat to evaporate the excess liquid. Let the mixture cool to room temperature.

8) Transfer the cooled mixture to a food processor and blend into a smooth paste.

9) Remove from the food processor into a clean bowl and add 1/2 cup of chopped onions, 3-4 tbsp chopped cilantro, 3-4 chopped green chilies, and 1-2 bread slices turned into bread crumbs to the mixture. Mix well.

10) Shape the mixture into medium-sized round patties (tikkis).

11) Heat 1/2 inch oil in a frying pan over medium-high heat.

12) Shallow fry the tikkis on both sides for 2–3 minutes or until golden brown.

13) Serve hot with your favorite green or red chutney.
